This Banana Oatmeal is the perfect way to use up any overly ripe bananas, instead of making another batch of banana bread.
I also used old fashioned oats in place of the quick rolled oats, and soaked them in the milk and applesauce while assembling the other ingredients (adding the oat mix with the whole raisins).

- Prepare 6 of bananas (I used ones that had gone very ripe then froze and defrosted them).

- It's 2/3 cup of natural fat free yogurt.
- Prepare 1 tbsp of vanilla extract.
- You need 3 cup of oats (old fashioned, whizzed until fine in a food processor).

- You need 2 tsp of baking soda.
- You need 1 tsp of baking powder.
- Prepare 1 cup of stevia granules (sweetener).
Combine dry ingredients together in a large bowl. Combine banana, buttermilk, oil, vanilla, and eggs in a small bowl or measuring cup. Pour into prepared pan and top with a layer of sliced bananas. Top with brown sugar and broil until golden.

- Spray two medium loaf tins (this recipe makes two banana breads, but you can slice one of them when cold and wrap the pieces in plastic wrap then freeze for another time).

- Pour into two loaf tins and bake in centre of oven at 374F/ 180 C for 55 minutes - an hour.
