The traditional way to assemble a lemper is by taking a handful of steamed sticky rice/glutinous rice, place some meat filling at the center, enclose the meat witht the rice, then wrap the whole thing in banana leaves. Put the rice back on top of the banana leaves in the steamer basket. Remove from the heat and discard lemongrass and the leaves. Keep the rice covered until ready to make lemper so that it doesn't become dry.

  1. Put the soaked sticky rice into steamer and steam about 10-15 mins. Set aside. On other sauce pan, boil the coconut cream together with pandan leaves, bay leaves and a pinch of salt. As the rice very sticky, dont forget to brush any tools with oil even if you use baking paper like mine. And also brush your knive with oil too before cutting off the lemper.

While the rice is being steamed, put water and chicken breast into a pot. Layer it with cling wrap first for easy removal. Take half of the glutinous rice, pack it down the pan. Press hard with rice spoon/your hand - pls use plastic glove otherwise will be very sticky TRANSFER the steamed rice to a boil and POUR in the water. COVER with cling film and let the rice absorb the water completely.
